Think of meats prepared asado as a Southern relative to those prepared on traditional American barbecue. Both are cooked low and slow. While barbecue uses pits, Gaucho uses a parrilla, a wood-fired grill. The “South” in this context refers to Argentina, but it’s just as delicious.
