One of Pittsburgh’s fine dining landmarks has teamed up with two longtime local educators to create its first-ever fine table beer. The result is the Hyeholde Grisette, a Belgian-style beer brewed in partnership with Altered Genius Brewing Co., founded by teachers with more than 20 years of experience in Pittsburgh classrooms. Built for pairing, The Hyholde Grisette will make its premiere on Thu., Sept. 18 during Hyeholde’s second-annual beer dinner.

The six-course tasting menu will introduce guests to dishes inspired by a range of Altered Genius’ brews, pairing locally-sourced fish and chips with the Hyeholde Grisette, beer-braised pork belly with the Hoptruvian (American IPA), venison strip loin with the Oktoberfest Marzen, and more. For those unable to attend the beer dinner, weekends at Trailside Taproom, from Sept. 18 through Nov. 1,
will feature a limited-run Hyeholde charcuterie board served with the Hyeholde Grisette.

For $22, guests can enjoy house-made pickles, smoked olives, Hyeholde honey, chicken pâté, gravlax, and a curated selection of cheeses and cured meats, and cans of the Hyeholde Grisette will be available for $7.50 each.
